Glaze

  • 2 cups Powdered Sugar, sifted
  • 1 tsp Lemon Extract
  • 1/2 tsp Butter, softened
  • 3 tbsp Water

Instructions

  1. Preheat oven to 400 degrees and line a sheet pan with parchment.
  2. In a large bowl, sift together the flour and baking powder, set aside.
  3. In another large bowl, beat eggs with an electric hand mixer until foamy.
  4. While beating, gradually add the sugar.
  5. Then add the flour and butter alternating, and end with flour.
  6. Mixture will be thick, you will probably need to stir in the last of the flour by hand.
  7. Add in the lemon, anise and lemon rind and mix well.
  8. Scoop out dough, form into one inch balls and place on sheet pan.
  9. Bake for 7 – 8 minutes.
  10. Cool on wire rack and continue with remaining dough.
  11. Cool cookies completely before glazing.

Glaze

  1. In a medium bowl, mix all the glaze ingredients together by hand.
  2. If glaze is too thick, add a little more water.
  3. Glaze the tops of the cookies and garnish with sprinkles if desired.
  4. Enjoy!
