Ingredients Needed To Make Cinnamon Roll Snack Cake

  • all-purpose flour
  • granulated sugar
  • baking powder
  • baking soda
  • milk
  • large eggs
  • vanilla extract
  • dark brown sugar
  • ground cinnamon
  • confectioners sugar

How To Make Cinnamon Roll Snack Cake

First, pre-heat the oven to 350 degrees and lightly grease a bundt pan with cooking spray. In one large bowl, whisk together the all-purpose flour, granulated sugar, baking powder and baking soda.

In another bowl, whisk together the milk, eggs and vanilla extract. Pour the wet ingredients into the dry ingredients and whisk just until combined. Do not over mix, it’s ok if the batter is a little lumpy.

In a small bowl, mix the brown sugar, granulated sugar and ground cinnamon. Pour 1/3 of the batter into the lightly greased bundt pan.

Then sprinkle 1/2 of the sugar filling evenly on top of the batter then add the next 1/3 of the batter. Add remaining filling and then top with the rest of the batter.

Bake for 25 – 28 minutes. Checking at the 25 minute mark with a toothpick.

Once baked, let cool for 5 minutes and then flip out onto a wire rack. I let the cake cool completely before adding the icing but you can add it warm if you are serving immediately. You could also slice the cake frist and then drizzle the icing on top of each slice.

Once the cake has cooled, whisk the confectioners sugar and milk in a small bowl. I place a sheet of parchment under the wire rack to catch the icing as it drips, but you can also place the rack on a sheet pan to catch the drippings.

Pour and spread the icing the over the top of the cake and let run down the sides. Slice and serve!

Refrigerate or freeze in an airtight container.

Filling

  • 2 tbsp dark brown sugar
  • 2 tbsp granulated sugar
  • 1 tbsp ground cinnamon

Icing

  • 2 cups confectioners sugar
  • 3 tbsp milk (I used 2% milk)

Instructions

  1. Pre-heat oven to 350 degrees and lightly grease a bundt pan with cooking spray.
  2. In one large bowl, whisk together the all-purpose flour, granulated sugar, baking powder and baking soda.
  3. In another bowl, whisk together the milk, eggs and vanilla.
  4. Pour the wet ingredients into the bowl with the dry ingredient and whisk together until just combined, don’t over mix.
  5. In small bowl, mix the spices for the filling.
  6. Pour 1/3 of batter into bundt pan.
  7. Evenly sprinkle 1/2 of the filling on top of the batter.
  8. Add next 1/3 of batter and top with other half of filling.
  9. Add remaining batter.
  10. Bake for 25 – 28 minutes checking at the 25 minute mark with a toothpick.
  11. Remove from oven and turn out onto wire rack, let cool.
  12. In a medium bowl, whisk together the confectioners sugar and milk.
  13. Drizzle icing over cake.
  14. Serve and enjoy!
