Ingredients

- 1 1/2 cups granulated sugar
- 1/2 cup canola oil or vegetable oil
- 2 large eggs
- 1 cup pumpkin puree
- 1/2 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 tsp ground cloves
- 1/4 tsp baking powder
- 1 tsp baking soda
- 1 3/4 cups all-purpose flour
- 1/2 cup chopped pecans or chopped walnuts
Instructions
- Preheat oven to 325 degrees and line a loaf pan with parchment or lightly grease.
- In a large bowl, beat together sugar, oil, eggs and pumpkin with an electric hand mixer.
- Then beat in the cinnamon, nutmeg, cloves, baking powder, baking soda and flour.
- Stir in the chopped nuts by hand.
- Pour batter into prepared loaf pan.
- Bake for 60 – 65 minutes, checking with a toothpick at 60 minutes. If toothpick is not clean, continue baking for 1-2 minutes until clean.
- Remove from oven and cool on a wire rack.
- Enjoy!
