Creamy Polenta

Creamy Polenta is easier than you think! It only takes two ingredients to make a simple polenta, but the choice of corn meal is key to the smooth and creamy consistency!

Creamy Polenta

Without further delay….the secret is Very Fine Corn Meal!! Yep! I have tried others and it’s just not the same. This tastes like I am back in Italy!

The great thing about polenta is that a little goes a long way! Kind of like cooking rice. One cup makes a pot full!

So, bring 3 cups of water to a boil in a large saucepan or pot. When the water starts to boil, mix one of cup of very fine corn meal with a cup of cold water. I used water straight of the refrigerator and it’s perfect! Stir and combine well.

Then pour the corn meal mixture into the boiling water, stirring constantly until mixed it. Then add one more cup of room temperature water and mix very well. Make sure there are no lumps.

Reduce heat to a simmer, cover and cook for 20 minutes. Stir the mixture occasionally. After 20 minutes, you will have smooth Creamy Polenta!

Serve immediately with butter or olive oil. You can also top with grated cheese or your favorite tomato sauce!

Ingredients
  • 4 cups Water, divided
  • 1 cup Cold Water
  • 1 cup Very Fine Cornmeal
  • Pinch of Salt
Instructions
  1. In a medium-large pot with a lid, boil 3 cups of water and a pinch of salt.

  2. When the water starts to boil, mix together the cornmeal and 1 cup of cold water in a small bowl or measuring cup.

  3. Add to the boiling water and stir until combined.

  4. Add in one more cup of water and stir.

  5. Reduce heat to simmer and cover.

  6. Cook for 20 minutes, stirring occasionally.

  7. Serve immediately with butter or olive oil.

  8. Enjoy!
