How to Make Double Chocolate Coffee Cake:

Let’s get started on this cake! Preheat the oven to 350 degrees. In a large mixing bowl, beat the softened butter and sugar with an electric hand mixer or stand mixer. Next, add the sour cream, eggs, flour, cocoa, baking powder, baking soda and vanilla. Beat until well combined. Stir in one cup of the chocolate chips by hand.

Spread the batter into a cake pan lightly greased with cooking spray. Side note here, I used a springform pan with foil wrapped around the bottom to avoid leaking. I also placed it on a cookie sheet for baking. However, this is not necessary, you can use a 9 inch round or square cake pan or a 9 inch fluted pan.

Ok, back to the cake, let’s make the streusel. In a small bowl, add the flour, brown sugar, cocoa and butter. The butter shouldn’t be softened here but still cold. Using a pastry blender or a fork and knife, cut the butter into the dry ingredients until crumbs form. Stir in the remaining chocolate chips.

Sprinkle all the streusel on top of the batter. Bake for 55 – 60 minutes, checking with a toothpick for doneness.

Hope you enjoy!!
