Double Chocolate Coffee Cake

Ingredients
  • 1 cup Granulated Sugar
  • 1/2 cup Butter, Softened (1 stick)
  • 2 cups All-Purpose Flour
  • 1/2 cup Cocoa
  • 1 cup Sour Cream
  • 2 Large Eggs
  • 1 tsp Baking Powder
  • 1 tsp Baking Soda
  • 1 tsp Vanilla Extract
  • 1 cup Semi-Sweet Chocolate Chips
Chocolate Streusel Topping
  • 1/2 cup All-Purpose Flour
  • 1/2 cup Dark Brown Sugar
  • 1.5 tsp Cocoa
  • 1/4 cup Butter, Cold (1/2 stick)
  • 1/2 cup Semi-Sweet Chocolate Chips
Instructions
  1. Preheat oven to 350 degrees and lightly grease a 9 inch cake pan.

  2. In a large mixing bowl, beat together the softened butter and sugar.

  3. Next, add in flour, cocoa, sour cream, eggs, baking powder, baking soda and vanilla. Beat until combined.

  4. Stir in the chocolate chips.

  5. Spread batter into the greased cake pan.

  6. In a small bowl, add in the flour, brown sugar, cocoa and cold butter.

  7. Using a pastry blender or fork and knife, cut the butter into the dry ingredient until crumbs form.

  8. Stir in the chocolate chips.

  9. Sprinkle mixture over top of the cake batter.

  10. Bake for 55 - 60 minutes, checking with a toothpick.

Recipe Notes
  • I used a springform pan with foil wrapped around the bottom to avoid leaking. I also placed it on a cookie sheet for baking. However, this is not necessary, you can use a 9 inch round or square cake pan or a 9 inch fluted pan.
