Love Chocolate? Love Oatmeal Cookies? Then you’ll love these Double Chocolate Oatmeal Cookies! The best of both worlds and an easy for weeknight or weekend baking!
Pre-heat oven to 350 degrees and line a sheet pan with parchment.
In large bowl, blend together the softened butter and sugars using a hand mixer.
Then add eggs and vanilla. Mix well.
Add in flour and cocoa powder.
Add oatmeal and stir in by hand.
Stir in chocolate chips. I used dark chocolate chips.
Using a cookie scoop, measure out about a dozen cookies per cookie sheet. This recipe made 45 cookies!!
These cookies do not spread when baked so you can keep them in scoop shape or grease the bottom of a glass and press the scoop of dough into a flat shape.
Bake for 8 – 10 minutes. Transfer Double Chocolate Oatmeal Cookies to rack for cooling. Repeat steps until all cookies are baked.

Next, beat in flour, cocoa and baking soda.

Stir in oats and chocolate chips by hand.

Using a cookie scoop, arrange cookies on parchment.

Lightly grease the bottom of a glass with cooking spray and press the cookies down a little into a flat circle.

Bake for 8 – 10 minutes and transfer to rack for cooling.

Repeat previous 3 steps with remaining cookie dough.
