Who needs takeout when you can make this Easy Mushroom Fried Rice at home?! This simple version is not only ready in less than 30 minutes but healthier than takeout!

- Green Onions
- White Button or Portobello Mushrooms
- 90 Second Jasmine Rice
- Chili Garlic Sauce
- Soy Sauce
- Eggs

How to Make Easy Mushroom Fried Rice:
First thing, get everything prepped and ready. This recipe doesn’t take long, so there isn’t much time to prep or search your pantry for items as you go.
Finely chop the green onions and mushrooms. Heat olive oil in a large skillet or wok. Add in mushrooms and onions, cook for 5 minutes.
Next, add in the rice and stir to coat, cook for 5 minutes. I used 90 second jasmine rice, really, because I love jasmine rice but you can also use white or brown rice. Also, I use the 90 second rice since it’s already cooked, so this saves time from cooking and cooling the rice before adding to the skillet. Fried rice uses cold or cooled rice.
Next add the soy sauce and chili garlic sauce. If you aren’t much on the spicy, just omit the chili garlic. Stir to coat and incorporate, cook for 5 minutes.
Create a well in the middle of the rice, crack both of the eggs into the well. Using the spatula, break the yolks and scramble the eggs within the well. Once the eggs are cooked, stir into the rice.
Transfer to serving dish(es) and enjoy immediately!

Easy Mushroom Fried Rice
- Total Time: 30 minutes

Ingredients
- 2 tbsp olive oil
- 2 packets 90 second jasmine rice
- 5–6 green onions, finely chopped
- 8 oz white button or baby bella mushrooms, finely chopped
- 2 tsp chili garlic sauce
- 2 tbsp soy sauce
- 2 large eggs
Instructions
- Heat olive oil in a large skillet or wok over medium heat.
- Add in the finely chopped green onions and mushrooms, stir and cook for 5 minutes.
- Add in the rice, stir and cook for another 5 minutes.
- Add the soy sauce and chili garlic sauce, if desired, stir and cook for another 5 minutes.
- Create a well in the middle of the rice, crack both eggs into the well. Using a spatula, break the yolk and scramble the eggs within the well.
- Once the eggs are scrambled, incorporate them into the rice.
- Serve immediately!
