Easy Mushroom Fried Rice

Ingredients

  • 2 tbsp olive oil
  • 2 packets 90 second jasmine rice
  • 56 green onions, finely chopped
  • 8 oz white button or baby bella mushrooms, finely chopped
  • 2 tsp chili garlic sauce
  • 2 tbsp soy sauce
  • 2 large eggs

Instructions

  1. Heat olive oil in a large skillet or wok over medium heat.
  2. Add in the finely chopped green onions and mushrooms, stir and cook for 5 minutes.
  3. Add in the rice, stir and cook for another 5 minutes.
  4. Add the soy sauce and chili garlic sauce, if desired, stir and cook for another 5 minutes.
  5. Create a well in the middle of the rice, crack both eggs into the well. Using a spatula, break the yolk and scramble the eggs within the well.
  6. Once the eggs are scrambled, incorporate them into the rice.
  7. Serve immediately!
  8. Enjoy!
