These Egg Muffins are perfect for breakfast meal prep. They freeze nicely and reheat in less than an minute, for an easy breakfast as you are running out the door!
Pre-heat oven to 350 degrees.
Chop peppers and yellow onion. I used a red and yellow pepper, but you can use a green or orange pepper too!
Place in small bowl.
Add cheese to small bowl with chopped vegetables.
Toss cheeses and vegetables together and set aside.
In a large bowl, add eggs, egg whites, salt and pepper.
Whisk the eggs together.
Spray a 12 count muffin pin with cooking spray.
Place 1/2 teaspoon of bacon pieces in the bottom of each muffin tin.
Measure about 2 tablespoons of cheese and vegetable mixture into each muffin tin.
Evenly divide egg mixture between each muffin tin.
Bake for 22 -25 minutes, until eggs are set. The eggs will puff up.
Remove from oven and let cool in pan for about 5 minutes. Eggs will de-puff. Run a knife around the tins to make sure the eggs didn’t stick. Transfer to cooling rack.
Freeze in airtight container, reheat in microwave for 1 minute.

- 1 cup Egg Whites
- 2 tbsp Bacon (divided)
- 1/2 cup Red Pepper, chopped
- 1/2 cup Yellow Pepper, chopped
- 1/2 cup Yellow Onion, chopped
- 1 cup Cheddar Cheese, shredded
- 1/2 cup Mozzarella, shredded
- Salt (to taste)
- Pepper (to taste)

Place 1/2 teaspoon of bacon on the bottom of each tin.

Divide vegetable and cheese mixture between each tin, about 2 tablespoons per tin.

Evenly distribute egg mixture between each tin.

Bake for 22 – 25 minutes, eggs will puff up but de-puff when cooled.

Let cool for 5-10 minutes, run a knife around the edges to loosen from pan and transfer muffins to cooling rack.

Freeze muffins.

To enjoy, reheat in microwave for about 1 minute.
