These Gingerbread Biscotti are perfect holiday addition to your cup of tea, coffee or hot cocoa! The warm addition of gingerbread spices makes a wonderful spin on the traditional biscotti!
Ingredients Needed For Gingerbread Biscotti
- salted butter
- dark Brown Sugar
- molasses
- large eggs
- ground ginger
- ground cinnamon
- ground nutmeg
- ground cloves
- all-purpose flour
- baking powder

How To Make Gingerbread Biscotti
Preheat oven to 375 degrees and line a sheet pan with parchment.
In a large bowl, cream together the softened butter and dark brown sugar with an electric hand mixer. Beat in the eggs one at a time and then mix in the molasses. Lastly, beat in the dry ingredients, ground ginger, ground cinnamon, ground nutmeg, ground cloves, all-purpose flour and baking powder.
Divide the batter in half, sprinkle the tops with flour and with floured hands, shape into 2 logs. Place the logs onto the parchment lined sheet pan. Leave enough space for the logs to expand, about 2 inches.
Bake for 20 minutes. Remove from oven and cool for 15 minutes or until cool enough to slice.
Using a serrated knife, slice the logs diagonally into one inch slices. You should get about 12 slices per log. Return the sliced cookies to the parchment lined sheet pan laying the pieces on one side. Bake at 375 for 10 minutes then flip to the other side. Bake for another 10 minutes. If desired, drizzle or dip in melted white chocolate.
Cool and store in an airtight container.

- 1.4 tsp ground cloves
- 2 1/4 cups all-purpose flour
- 1 tsp baking powder
Instructions
- Preheat oven to 375 degrees and line a sheet pan with parchment.
- In a large bowl, beat together the butter and dark brown sugar with an electric hand mixer until smooth.
- Beat in the eggs, one at a time.
- Then beat in the molasses.
- Lastly, beat in the dry ingredients, ground ginger, ground cinnamon, ground nutmeg, ground cloves, all-purpose flour and baking powder.
- Split the dough in half and sprinkle the top of each half with a little flour to shape into rectangular logs, approx. 8x2x1 in size, and place on a parchment lined sheet pan.
- Bake for 20 minutes.
- Remove from oven and cool for about 15 minutes or until cool enough to slice.
- Using a serrated knife, slice the logs into 1 inch slices diagonally .
- Arrange all the slices on the baking sheet on their sides.
- Bake for 10 minutes then flip to other side, bake another 10 minutes.
- Let cool completely and if desired, drizzle or dip in melted white chocolate.
- Store in an airtight container.
