Gingerbread Biscotti

Instructions

  1. Preheat oven to 375 degrees and line a sheet pan with parchment.
  2. In a large bowl, beat together the butter and dark brown sugar with an electric hand mixer until smooth.
  3. Beat in the eggs, one at a time.
  4. Then beat in the molasses.
  5. Lastly, beat in the dry ingredients, ground ginger, ground cinnamon, ground nutmeg, ground cloves, all-purpose flour and baking powder.
  6. Split the dough in half and sprinkle the top of each half with a little flour to shape into rectangular logs, approx. 8x2x1 in size, and place on a parchment lined sheet pan.
  7. Bake for 20 minutes.
  8. Remove from oven and cool for about 15 minutes or until cool enough to slice.
  9. Using a serrated knife, slice the logs into 1 inch slices diagonally .
  10. Arrange all the slices on the baking sheet on their sides.
  11. Bake for 10 minutes then flip to other side, bake another 10 minutes.
  12. Let cool completely and if desired, drizzle or dip in melted white chocolate.
  13. Store in an airtight container.
