If you love Gingerbread, you will love these Gingerbread Blondies! Perfectly buttery and chewy, with all goodness of Gingerbread, you can serve them with whipped topping or icing.

Gingerbread Blondies

Ingredients Needed For Gingerbread Blondies

  • salted butter
  • dark brown sugar
  • large eggs
  • vanilla extract
  • molasses
  • ground ginger
  • ground cinnamon
  • ground nutmeg
  • ground cloves
  • all-purpose flour
  • cooking spray

How To Make Gingerbread Blondies

Preheat oven 350 degrees and lightly grease a 13 x 9 baking dish with cooking spray, set aside. Place butter in a microwave safe bowl or glass measuring cup. Microwave for one minute or until melted, it does not have to be completed melted. But let butter sit for a minute if its too hot, so it does not curdle the eggs.

Add butter and dark brown sugar to large mixing bowl and beat using a hand mixer until combined. Then mix in eggs and vanilla extract. Lastly, add molasses, spices and flour and mix until completely combined.

Spread the batter into the lightly greased 9 x 13 baking dish. Bake for 22-25 minutes.

Let cool and cut into squares. Store in an airtight container.

Ingredients

  • 1 cup salted butter, melted (2 sticks)
  • 2 cups dark brown sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1 tbsp molasses
  • 3 tsp ground ginger
  • 2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/8 tsp ground cloves
  • 2 cups all-purpose flour
  • cooking spray

Instructions

  1. Preheat oven 350 degrees.
  2. Lightly grease a 9 x 13 baking dish and set aside.
  3. Place butter in a microwave safe dish and microwave for 1 minute.
  4. Add melted butter and brown sugar to large mixing bowl and mix with a hand mixer.
  5. Next, beat in eggs and vanilla extract.
  6. Lastly, add the molasses, spices and flour and mix until completely combined.
  7. Spread into greased baking pan.
  8. Bake for 22-25 minutes. 
  9. Cool and cut into squares
  10. Enjoy!
