Gingerbread Popovers

These Gingerbread Popovers will be the hit of the holiday season! No need for a popover pan, a muffin tin works perfectly! Mix everything is a blender and bake! So easy!

Gingerbread Popovers

Ingredients Needed For Gingerbread Popovers

  • large eggs
  • milk
  • vanilla extract
  • all-purpose flour
  • granulated sugar
  • ground ginger
  • ground cinnamon
  • ground nutmeg
  • ground cloves
  • molasses
  • salted butter

How To Make Gingerbread Popovers

This recipe uses a 12 count muffin tin but, if you have one, you can use a popover tin. Also, I used a blender, but if you have a large food processor, that would also work, as would a large bowl and hand mixer.

Place your muffin tin or popover pan in the oven on a middle rack and preheat to 425. This recipe takes minutes to mix together so starting the oven early is a good idea. Then melt the butter before starting on the blending.

Once the oven has preheated, add the eggs, milk and vanilla to the blender and mix or pulse until combined. Next, add the flour, sugar, molasses, spices and the cooled butter and mix together. The butter doesn’t have to be cold but cooled enough that it won’t curdle the eggs. This is why I like to add the butter last. Scrape down the sides if needed and pulse again.

Now, we need to move quickly so the pan doesn’t cool. Carefully remove the muffin tin from the oven using oven mitts. Spray each tin with cooking spray. Evenly pour the batter into each tin, they should be at least 3/4 full.

Place back in the oven and bake for 20 minutes. At 20 minutes, reduce heat to 350 degrees and bake for another 10 minutes. Remove from the oven and cool for about 10 minutes before removing from the pan.

Ingredients

  • 4 large eggs
  • 1 1/2 cups milk
  • 2 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 4 tsp ground ginger
  • 3 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1 tbsp molasses
  • 1/4 cup salted butter, melted and cooled
  • cooking spray

Instructions

  1. Place a 12 count muffin tin in the oven and preheat to 425 degrees.
  2. Add eggs, milk and vanilla in a blender and combine well.
  3. Add the flour, sugar, molasses, spices and cooled melted butter and blend until well combined.
  4. Using oven mitts, carefully remove muffin tin from oven and spray each tin with cooking spray.
  5. Evenly pour batter into each tin. They should be at least 3/4 full.
  6. Return to oven and bake for 20 minutes.
  7. At 20 minutes, reduce heat to 350 and bake for another 10 minutes.
  8. Remove from oven a cool for 10 minutes.
  9. Enjoy!
