- 2 2/3 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp sea salt
- 1 cup Irish cheddar, grated
- 1 1/2 cups buttermilk
Instructions
- Pre-heat oven to 425 degrees and line a sheet pan with parchment.
- In a large bowl, mix together the flour, baking soda, sea salt and grated Irish cheddar with a wooden spoon or spatula.
- Create a well in the middle of flour and cheese mixture, pour in the buttermilk.
- Mix with a wooden spoon or spatula until all the buttermilk is incorporated and the dough sticks together. If the dough isn’t coming together, add more buttermilk a tablespoon at a time until dough sticks together.
- Lightly flour the parchment in the sheet pan and transfer dough.
- Sprinkle a little flour on top and lightly knead and form into a rectangular loaf.
- Using a pastry cutter or sharp knife, cut dough into 6 equal section.
- Gently form each section into a ball, and using a sharp knife cut a deep cross into the top of each ball.
- Bake for 10 minutes on a rack in the middle of the oven, then drop to 400 degrees and bake for another 10 minutes.
- Let cool 5 minutes before serving.
