Irish Soda Bread Rolls

Instructions

  1. Pre-heat oven to 425 degrees and line a sheet pan with parchment.
  2. In a large bowl, mix together the flour, baking soda, sea salt and grated Irish cheddar with a wooden spoon or spatula.
  3. Create a well in the middle of flour and cheese mixture, pour in the buttermilk.
  4. Mix with a wooden spoon or spatula until all the buttermilk is incorporated and the dough sticks together. If the dough isn’t coming together, add more buttermilk a tablespoon at a time until dough sticks together.
  5. Lightly flour the parchment in the sheet pan and transfer dough.
  6. Sprinkle a little flour on top and lightly knead and form into a rectangular loaf.
  7. Using a pastry cutter or sharp knife, cut dough into 6 equal section.
  8. Gently form each section into a ball, and using a sharp knife cut a deep cross into the top of each ball.
  9. Bake for 10 minutes on a rack in the middle of the oven, then drop to 400 degrees and bake for another 10 minutes.
  10. Let cool 5 minutes before serving.
