This Macaroni and Cheese is light and healthy, yet, still creamy and cheesy! Not to mention high in protein and fiber with Chickpea Pasta and Broccoli! It’s so good no one will know it’s healthy! Shhhh!
Cook pasta according to package instructions. If chickpea pasta isn’t your thing, use regular or whole wheat pasta. Once cooked, drain, set aside and keep warm.
Pre-heat oven to 350 degrees and lightly grease a small casserole dish with cooking spray.
In a large bowl, add all the ingredients except for the broccoli and breadcrumbs .
Mix together and add warm pasta.
Mix and add broccoli.
Mix thoroughly and transfer to greased casserole dish.
Sprinkle breadcrumbs evenly on top of Macaroni and Cheese.
Bake for 35 – 40 minutes until bubbly.

- 6 oz. Chickpea Pasta (or Regular)
- 3 oz. Gouda, shredded
- 3 oz. White Cheddar, shredded
- 1/2 cup Skim Milk
- 2 Egg Whites (or 1/4 cup Liquid Egg Whites)
- 1/4 cup Light Sour Cream
- 1 cup Broccoli, chopped
- Salt
- Pepper
- 1/8 cup Italian Breadcrumbs

Pre-heat oven 350 degrees and lightly grease small casserole dish with cooking spray.

Cook pasta according to instructions, drain, set aside and keep warm.

In a large bowl, add all remaining ingredients except for breadcrumbs and mix.

Add warm pasta and stir well.

Pour into greased casserole dish.

Top with breadcrumbs.

Bake for 35 – 40 minutes.
