Ingredients

- 1 box spice cake mix or pumpkin cake mix
- 15 oz pumpkin puree (1 can)
- 1/4 cup pumpkin seeds (optional)
Instructions
- Pre-heat oven 350 degrees and lightly grease a mini muffin pan with cooking spray
- Add pumpkin and cake mix to large bowl
- Beat with a hand mixer until combined
- Using a 1.5 inch cookie scoop, evenly divide into 24 greased mini muffin tins
- If desired, top with pumpkin seeds.
- Bake 10 – 12 minutes, or until toothpick comes out clean
- Transfer to wire rack to cool
