These Oatmeal Fudge Bars remind me of the holidays but they are perfect for any day of the year! They are so rich, fudgy and easy to make! Perfect for your next office party, dinner party or snack time!

Oatmeal Fudge Bars

Ingredients Needed For Oatmeal Fudge Bars

  • salted butter
  • dark brown sugar
  • large eggs
  • vanilla extract
  • baking mix (such as Bisquick)
  • quick oats
  • dark chocolate chips
  • sweetened condensed milk

How To Make Oatmeal Fudge Bars

I honestly forgot how good these Oatmeal Fudge Bars were and now I can’t get enough!

Let’s get started! Preheat the oven to 350 degrees and lightly grease a 9 x 13 baking dish with cooking spray. In a large bowl, beat together the butter and brown sugar with a hand mixer. Then add in eggs and vanilla and lastly the baking mix.

Stir in the quick oats with a spoon and set to the side for a moment while we make the fudge.

In a medium, heat the dark chocolate chips, butter and sweetened condensed milk over low heat. Constantly stirring until the mixture is smooth.

Then stir in the vanilla extract. Remove from heat.

Spread about 2/3 of the oatmeal batter into the greased baking dish.

Then spread all of the fudge mixture on top.

Lastly, dollop the remaining oatmeal batter on top of the fudge layer.

Baking for 30 minutes, let cool slightly before cutting.

Ingredients

Scale
  • 3/4 cup salted butter, softened
  • 2 cups dark brown sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 2 1/2 cups baking mix (such as bisquick)
  • 3 cups quick oats

Fudge

  • 1 pkg dark chocolate chips (12 ounces)
  • 1 cup sweetened condensed milk
  • 2 tbsp salted butter
  • 2 tsp vanilla extract

Instructions

  1. Preheat oven to 350 degrees and lightly grease a 9 x 13 baking dish with cooking spray.
  2. In a large bowl, beat together the softened butter and brown sugar with a hand mixer.
  3. Next beat in the eggs and vanilla.
  4. Then mix in the baking mix.
  5. Stir in the oats by hand and set mixture a side.
  6. Heat a medium saucepan over low heat, add in dark chocolate chips, butter and sweetened condensed milk.
  7. Stirring continuously until smooth, then stir in vanilla, remove from heat.
  8. Spread about 2/3 of the oatmeal batter into greased baking dish.
  9. Spread all the fudge on top of the oatmeal batter, then drop the remaining oatmeal batter in dollops over the fudge.
  10. Bake for 30 minutes, let cool slightly before cutting.
  11. Enjoy!
