This Olive and Tomato Orzo is the perfect side dish! Made with white wine and capers, this dish is so flavorful! It can be served hot or cold and ready in 30 minutes!

  • orzo
  • olive oil
  • grape or cherry tomatoes
  • kalamata olives
  • capers
  • white wine (such as pinot grigio)

How To Make Olive and Tomato Orzo

This Olive and Tomato Orzo is so easy to make! This Olive and Tomato sauce is also great on other pastas. It can make a great warm side dish or cold pasta salad for your next gathering!

Cook the orzo to the package instructions and drain. Place in a serving bowl or dish. Drizzle with one tablespoon of the olive oil and toss the orzo to coat. This will keep the orzo from sticking while you cook the sauce.

In a deep skillet, heat the other tablespoon of olive oil over medium or medium-high heat. Add in the tomatoes, olives and capers and stir. I let a little of olive and caper juice get in the pan, not too much, but just a little for flavor.

Cook the tomatoes, olives and capers for about 5 minutes or until the tomatoes start to breakdown a little. Then add the white wine.

Cook the sauce for about 10 minutes and then pour over the orzo. Toss and serve!

This mixture can also be made ahead of time, refrigerated and served cold as a pasta salad.

Ingredients

Scale
  • 8 oz orzo, cooked
  • 2 tbsp olive oil, divided
  • 1 pint grape or cherry tomatoes
  • 1/2 cup kalamata olives
  • 4 tsp capers
  • 1 cup white wine (such as pinot grigio)

Instructions

  1. Cook Orzo according to package instructions. Drain and place in serving bowl.
  2. Drizzle 1 tablespoon of the olive oil over the orzo and toss to coat. Set aside.
  3. In a deep skillet, heat 1 tablespoon of olive oil over medium heat.
  4. Add tomatoes, olives and capers and let cook for 5 minutes.
  5. Then add 1 cup of white wine and let cook for 10 minutes.
  6. Pour tomato mixture over orzo, toss and serve.
  7. Enjoy!
