Ingredients

- 8 oz orzo, cooked
- 2 tbsp olive oil, divided
- 1 pint grape or cherry tomatoes
- 1/2 cup kalamata olives
- 4 tsp capers
- 1 cup white wine (such as pinot grigio)
Instructions
- Cook Orzo according to package instructions. Drain and place in serving bowl.
- Drizzle 1 tablespoon of the olive oil over the orzo and toss to coat. Set aside.
- In a deep skillet, heat 1 tablespoon of olive oil over medium heat.
- Add tomatoes, olives and capers and let cook for 5 minutes.
- Then add 1 cup of white wine and let cook for 10 minutes.
- Pour tomato mixture over orzo, toss and serve.
