How To Make Easy Pumpkin Pancakes
But if you love pumpkin, these Pumpkin Pancakes are for you! This batter is a little thicker than normal but still makes fluffy pancakes!
In a large mixing bowl, add all the ingredients and stir together. You can also beat with a hand mixer, but either way make sure you work out the lumps in the batter.
Since this pancake batter is a little thicker you can’t use the traditional pancake cooking method of flipping when the little bubbles appear on the top. So, prep your skillet as you normally would with butter, oil or cooking spray and turn your burner to medium heat. I eventually turned my burner to low.
Measure out a 1/4 cup of batter for each pancake. Depending on your skillet you can probably cook 2-3 at time unless you are using a griddle, then you can make more!
So, when you measure your 1/4 cup, you will need to spread it a little in the skillet. Since the batter is thick, it won’t disperse in the pan the same as traditional pancake batter.
I cooked each pancake 3 minutes per side over a low heat. If you cook at too high of heat the pancakes will burn before they cook through. I have found that this timing and heat work pretty well but everyone’s stove tops are different so you may need to adjust.
This recipe yields about 16-18 pancakes and can be made ahead of time, frozen and reheated for breakfast!

- 3 cups bisquick
- 1 cup pumpkin puree
- 1 cup milk
- 1/8 cup granulated sugar
- 2 tsp pumpkin pie spice
- 1 tsp ground cinnamon
- maple syrup
Instructions
- In a large mixing bowl, add all the ingredients and stir together by hand. Making sure to break up all the lumps.
- Heat a skillet over medium heat and grease with a little butter or oil.
- Measure out a 1/4 cup of batter per pancake, spread out the batter into a circle since it’s a thicker batter. Depending on size of skillet, cook 2 or 3 at at time.
- Cook pancakes for 3 minutes a side. Turn down heat to low if pancakes start to burn before they are cooked through. Continue with remaining batter.
- Serve immediately and top with maple syrup.
