Pumpkin Spice Cake
- 3/4 cup salted butter, softened
- 1 cup dark brown sugar, packed
- 1 cup granulated sugar
- 3 large eggs
- 1 cup pumpkin puree
- 1/2 cup buttermilk
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- 2 tsp baking powder
- 3 tsp pumpkin pie spice
- 1 tsp ground cinnamon
- 1 tsp baking soda
Cinnamon Cream Cheese Frosting
- 8 oz cream cheese, softened
- 1/4 cup salted butter, softened
- 1 tbsp milk
- 2 tsp ground cinnamon
- 1 tsp vanilla extract
- 4 cups confectioners sugar
Instructions
Pumpkin Spice Cake
- Preheat oven to 350 degrees.
- Grease a 13 x 9 pan with butter then line with parchment and grease the parchment.
- In a large mixing bowl, beat butter until creamy with an electric hand mixer.
- Beat in the sugars and then add the eggs one at a time, mixing between each addition.
- In a separate mixing bowl, combine the flour, baking powder, baking soda, pumpkin pie spice and cinnamon.
- In another separate bowl, beat together the pumpkin, buttermilk and vanilla.
- Now, alternate adding the flour mixture and then the pumpkin mixture to the butter and sugar mixture, mixing between each addition.
- Pour batter into greased pan and bake for 32 – 35 minutes, until toothpick is clean.
- Completely cool before frosting the cake.
Cinnamon Cream Cheese Frosting
- In a medium mixing bowl, beat together the softened cream cheese and butter.
- Beat in vanilla and milk.
- Beat in the sugar and cinnamon until smooth.
- Frost the top of the cake.
