How to Make Pumpkin Streusel Muffins:
These muffins are so easy to whip together! Let’s get started. Preheat the oven to 350 degrees. Line a 12 count muffin tin with paper liners or you can lightly grease with cooking spray. Set the prepped tin aside.
Using a large mixing bowl, beat together the pumpkin puree, canola or vegetable oil, eggs, vanilla extract and dark brown sugar using an electric hand mixer or stand mixer. Once combined, add in the remaining dry ingredients, the flour, pumpkin pie spice, ground cinnamon, baking powder, baking soda and a pinch of salt. Beat until combined.
Using a cookie scoop or small measuring cup, evenly distribute the batter between the 12 lined muffin tins. Set aside.
Now mix up the streusel topping. In a small bowl, add the cold butter, flour, brown sugar and cinnamon. Using a pastry blender or a fork, work the butter in to the dry ingredients until the mixture is crumbs.
Using a tablespoon, sprinkle the topping over each of the muffins. Bake for 20 minutes, check that a toothpick comes out clean, if not, bake for one additional minute until clean. Being careful to not over bake.
Remove from oven and cool slightly before serving. Remaining muffins can be stored in an airtight container or frozen.

- Evenly distribute batter into each muffin liner, set aside.
- In a small bowl, add the cold butter, flour, brown sugar and cinnamon.
- Using a pastry blender or a fork, work the butter into the dry ingredients until a crumb is formed.
- Using a tablespoon, sprinkle the streusel on top of each muffin.
- Bake for 20 minutes.

Notes
- For a healthier version, you can substitute the oil with no sugar added applesauce.
- Muffins can be baked without muffins liners, just lightly grease the muffin tins.
