These Pumpkin Streusel Muffins are the perfect addition to your next brunch! Soft, fluffy and full of pumpkin spice! Plus, topped with streusel! Easy to make and ready in under an hour!

Ingredients Needed For Pumpkin Streusel Muffins:

Muffins:

  • Pumpkin Puree
  • Canola Oil or Vegetable Oil
  • Large Eggs
  • Vanilla Extract
  • Dark Brown Sugar
  • All-Purpose Flour
  • Pumpkin Pie Spice
  • Ground Cinnamon
  • Baking Powder
  • Baking Soda
  • Sea Salt

Streusel:

  • Salted Butter
  • All-Purpose Flour
  • Dark Brown Sugar
  • Ground Cinnamon

How to Make Pumpkin Streusel Muffins:

These muffins are so easy to whip together! Let’s get started. Preheat the oven to 350 degrees. Line a 12 count muffin tin with paper liners or you can lightly grease with cooking spray. Set the prepped tin aside.

Using a large mixing bowl, beat together the pumpkin puree, canola or vegetable oil, eggs, vanilla extract and dark brown sugar using an electric hand mixer or stand mixer. Once combined, add in the remaining dry ingredients, the flour, pumpkin pie spice, ground cinnamon, baking powder, baking soda and a pinch of salt. Beat until combined.

Using a cookie scoop or small measuring cup, evenly distribute the batter between the 12 lined muffin tins. Set aside.

Now mix up the streusel topping. In a small bowl, add the cold butter, flour, brown sugar and cinnamon. Using a pastry blender or a fork, work the butter in to the dry ingredients until the mixture is crumbs.

Using a tablespoon, sprinkle the topping over each of the muffins. Bake for 20 minutes, check that a toothpick comes out clean, if not, bake for one additional minute until clean. Being careful to not over bake.

Remove from oven and cool slightly before serving. Remaining muffins can be stored in an airtight container or frozen.

Ingredients

Scale
  • 15 oz pumpkin puree
  • 1/3 cup canola oil or vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup dark brown sugar
  • 1 1/2 cups all-purpose flour
  • 2 1/2 tsp pumpkin pie spice
  • 1 tsp ground cinnamon
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • pinch of sea salt

Streusel Topping

  • 3 tbsp salted butter
  • 1/4 cup all-purpose flour
  • 2 tbsp dark brown sugar
  • 1/2 tsp ground cinnamon

Instructions

  1. Preheat oven to 350 degrees and place the liners in the muffin tin, set aside.
  2. In a large mixing bowl, beat together the pumpkin puree, oil, eggs, vanilla and brown sugar with an electric hand mixer.
  3. Beat in the flour, pumpkin pie spice, cinnamon, baking powder, baking soda and a pinch of salt.
  4. Evenly distribute batter into each muffin liner, set aside.
  5. In a small bowl, add the cold butter, flour, brown sugar and cinnamon.
  6. Using a pastry blender or a fork, work the butter into the dry ingredients until a crumb is formed.
  7. Using a tablespoon, sprinkle the streusel on top of each muffin.
  8. Bake for 20 minutes.
  9. Enjoy!
