Pumpkin Streusel Muffins

Instructions

  1. Preheat oven to 350 degrees and place the liners in the muffin tin, set aside.
  2. In a large mixing bowl, beat together the pumpkin puree, oil, eggs, vanilla and brown sugar with an electric hand mixer.
  3. Beat in the flour, pumpkin pie spice, cinnamon, baking powder, baking soda and a pinch of salt.
  4. Evenly distribute batter into each muffin liner, set aside.
  5. In a small bowl, add the cold butter, flour, brown sugar and cinnamon.
  6. Using a pastry blender or a fork, work the butter into the dry ingredients until a crumb is formed.
  7. Using a tablespoon, sprinkle the streusel on top of each muffin.
  8. Bake for 20 minutes.
  9. Enjoy!

Notes

  • For a healthier version, you can substitute the oil with no sugar added applesauce.
  • Muffins can be baked without muffins liners, just lightly grease the muffin tins.
