Ingredients

- 15 oz pumpkin puree
- 1/3 cup canola oil or vegetable oil
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup dark brown sugar
- 1 1/2 cups all-purpose flour
- 2 1/2 tsp pumpkin pie spice
- 1 tsp ground cinnamon
- 1 tsp baking powder
- 1/2 tsp baking soda
- pinch of sea salt
Streusel Topping
- 3 tbsp salted butter
- 1/4 cup all-purpose flour
- 2 tbsp dark brown sugar
- 1/2 tsp ground cinnamon
Instructions
- Preheat oven to 350 degrees and place the liners in the muffin tin, set aside.
- In a large mixing bowl, beat together the pumpkin puree, oil, eggs, vanilla and brown sugar with an electric hand mixer.
- Beat in the flour, pumpkin pie spice, cinnamon, baking powder, baking soda and a pinch of salt.
- Evenly distribute batter into each muffin liner, set aside.
- In a small bowl, add the cold butter, flour, brown sugar and cinnamon.
- Using a pastry blender or a fork, work the butter into the dry ingredients until a crumb is formed.
- Using a tablespoon, sprinkle the streusel on top of each muffin.
- Bake for 20 minutes.

Notes
- For a healthier version, you can substitute the oil with no sugar added applesauce.
- Muffins can be baked without muffins liners, just lightly grease the muffin tins.
