Ingredients Needed For Pumpkin Streusel Snack Cake
- pumpkin puree
- canola oil or vegetable oil
- large eggs
- vanilla extract

How To Make Pumpkin Streusel Snack Cake
Preheat the oven to 350 degrees and lightly grease a square baking dish with cooking spray. Set the prepped dish aside.
Using a large mixing bowl, beat together the pumpkin puree, canola or vegetable oil, eggs, vanilla extract and dark brown sugar using an electric hand mixer or stand mixer. Once combined, add in the remaining dry ingredients, the flour, pumpkin pie spice, ground cinnamon, baking powder, baking soda and a pinch of salt. Beat until combined.
Evenly spread the batter in the greased square baking dish. Set aside.
Now mix up the streusel topping. In a small bowl, add the cold butter, flour, brown sugar and cinnamon. Using a pastry blender or a fork, work the butter in to the dry ingredients until the mixture is crumbs.
Sprinkle the topping over the batter. Bake for 25 – 28 minutes, check that a toothpick comes out clean, if not, bake for one additional minute until clean. Being careful to not over bake.
Remove from oven and cool slightly before serving. Remaining cake can be stored in an airtight container or frozen.
