Instructions

  1. Preheat oven to 350 degrees and lightly grease a square baking dish with cooking spray, set aside.
  2. In a large mixing bowl, beat together the pumpkin puree, oil, eggs, vanilla and brown sugar with an electric hand mixer.
  3. Beat in the flour, pumpkin pie spice, cinnamon, baking powder, baking soda and a pinch of salt.
  4. Spread batter in greased baking dish, set aside.
  5. In a small bowl, add the cold butter, flour, brown sugar and cinnamon.
  6. Using a pastry blender or a fork, work the butter into the dry ingredients until a crumb is formed.
  7. Sprinkle the streusel on top of the batter.
  8. Bake for 25 – 28 minutes, or until toothpick comes out clean.
  9. Enjoy!
