CAKE
- 15 oz pumpkin puree
- 1/3 cup canola oil or vegetable oil
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup dark brown sugar
- 1 1/2 cups all-purpose flour
- 3 tsp pumpkin pie spice
- 1 tsp ground cinnamon
- 1 tsp baking powder
- 1/2 tsp baking soda
- pinch of sea salt
- cooking spray
STREUSEL TOPPING
- 4 tbsp salted butter, cold
- 1/4 cup all-purpose flour
- 1/4 cup dark brown sugar
- 1 tbsp ground cinnamon
Instructions
- Preheat oven to 350 degrees and lightly grease a square baking dish with cooking spray, set aside.
- In a large mixing bowl, beat together the pumpkin puree, oil, eggs, vanilla and brown sugar with an electric hand mixer.
- Beat in the flour, pumpkin pie spice, cinnamon, baking powder, baking soda and a pinch of salt.
- Spread batter in greased baking dish, set aside.
- In a small bowl, add the cold butter, flour, brown sugar and cinnamon.
- Using a pastry blender or a fork, work the butter into the dry ingredients until a crumb is formed.
- Sprinkle the streusel on top of the batter.
- Bake for 25 – 28 minutes, or until toothpick comes out clean.
