Dress up your greens with this Puttanesca Green Bean Salad! Tomatoes, olives and capers sautéed with olive oil, white wine, garlic and fresh herbs! Served hot or cold, this salad is full of so many flavors!

- Roma Tomatoes
- Garlic Cloves
- Capers
- Olive Oil
- White Wine (such as Pinot Grigio)
- Fresh Italian Parsley
- Fresh Basil
- Kalamata Olives
- Salt and Pepper to Taste

How to Make Puttanesca Green Bean Salad:
This side dish may sound fancy and complicated but it’s actually very quick and easy to make! Bonus?! It can be made ahead of time and served reheated or cold!
First, get your green bean cooking. I steam mine in the microwave on the vegetable setting with a enough water to almost cover the beans, then drain once cooked. But you can use whichever way is best for you!
While the beans are cooking, get your skillet warmed to medium heat. Add the olive oil and garlic and saute until garlic is fragrant, about 2 – 3 minutes.
Once the garlic is ready, add in the chopped tomatoes, capers and olives. Cook for 1 – 2 minutes and then add the white wine. I generally use a Pinot Grigio, it’s not too sweet and generally a little dry, perfect for cooking.
Let the wine cook down about 5 minutes. By this time, the green beans should be perfectly cooked. Transfer them to a serving dish or bowl.
Once the wine has cooked down, add the fresh basil and Italian parsley and combine. Pour the puttanesca sauce over the cooked green beans and serve!

Puttanesca Green Bean Salad

Ingredients
- 2 lbs green beans
- 1 tbsp olive oil
- 4 garlic cloves, minced
- 4 roma tomatoes, diced
- 1 tbsp capers
- 1/4 cup kalamata olives, halved
- 1/4 cup white wine (such as pinot grigio)
- 1 tbsp fresh italian parsley, chopped
- 1 tbsp fresh basil, chopped
Instructions
- On the microwave vegetable setting, steam the green beans.
- Meanwhile, heat a large skillet over medium heat.
- Add olive oil and minced garlic, cook for 2 – 3 minutes, being careful to not burn the garlic.
- Add in the diced tomatoes, caper and olives, cooked for 1 – 2 minutes.
- Then add the white wine and let cook for another 5 minutes.
- Stir in the chopped herbs.
- Transfer steamed green beans to a serving dish and top with the puttanesca sauce.

Notes
- I used 2 pounds of fresh green beans but you can easily use one pound without cutting down the rest of the recipe.
- For the white wine, I use Pinot Grigio.
