  • Total Time: 25 minutes
  • Yield: 6 Servings 1x

Ingredients

Scale
  • 2 lbs green beans
  • 1 tbsp olive oil
  • 4 garlic cloves, minced
  • 4 roma tomatoes, diced
  • 1 tbsp capers
  • 1/4 cup kalamata olives, halved

Instructions

  1. On the microwave vegetable setting, steam the green beans.
  2. Meanwhile, heat a large skillet over medium heat.
  3. Add olive oil and minced garlic, cook for 2 – 3 minutes, being careful to not burn the garlic.
  4. Add in the diced tomatoes, caper and olives, cooked for 1 – 2 minutes.
  5. Then add the white wine and let cook for another 5 minutes.
  6. Stir in the chopped herbs.
  7. Transfer steamed green beans to a serving dish and top with the puttanesca sauce.
  8. Hope you enjoy!

Notes

  • I used 2 pounds of fresh green beans but you can easily use one pound without cutting down the rest of the recipe.
  • For the white wine, I use Pinot Grigio.
