Roasted Spaghetti Squash

Roasted Spaghetti Squash makes a great side or main dish! It’s so easy to prepare and it can be garnished in so many delicious ways!

Spaghetti Squash

Pre-heat oven to 400 degrees.

Carefully split spaghetti squash in half, if you don’t have a sharp knife, you can ask your grocery store or produce stand if they can split it for you.

Spaghetti Squash

Scoop out all the seeds using a large spoon.

Spaghetti Squash

Measure a teaspoon of olive oil in the middle of each half. Use a pastry brush to spread over the half. Add salt and pepper to taste.

Flip over and place the halves on a foil lined sheet pan.

Spaghetti Squash

Bake for 40 minutes.

Spaghetti Squash

Remove from oven and let sit about 5 minutes to cool, then flip over.

Spaghetti Squash

Run a fork through the roasted squash until it looks like “spaghetti”.

Enjoy immediately.

  • 1 Spaghetti Squash
  • 2 tsp Olive Oil

Instructions
  1. Pre-heat oven to 400 degrees.

  2. Line a sheet pan with foil.

  3. Split Spaghetti Squash in half.

  4. Scoop out seeds with a large spoon.

  5. Measure a teaspoon of olive oil in each half, and brush over squash with a pastry brush.

  6. Salt and Pepper to taste.

  7. Flip over and place on foil lined sheet pan.

  8. Bake for 40 minutes.

  9. Remove from oven and let sit for 5 minutes.

  10. Flip over squash and run a fork through the squash to make “spaghetti”.

  11. Enjoy!
