Roasted Spaghetti Squash makes a great side or main dish! It’s so easy to prepare and it can be garnished in so many delicious ways!
Pre-heat oven to 400 degrees.
Carefully split spaghetti squash in half, if you don’t have a sharp knife, you can ask your grocery store or produce stand if they can split it for you.
Scoop out all the seeds using a large spoon.
Measure a teaspoon of olive oil in the middle of each half. Use a pastry brush to spread over the half. Add salt and pepper to taste.
Flip over and place the halves on a foil lined sheet pan.
Bake for 40 minutes.
Remove from oven and let sit about 5 minutes to cool, then flip over.
Run a fork through the roasted squash until it looks like “spaghetti”.
Enjoy immediately.
