This Spinach Mandarin Salad is a wonderfully light and flavorful meal or addition to your next meal! Made with Spinach, Romaine, Mandarin Oranges, Carrots and Almonds this salad isn’t just delicious but healthy too!
I make this salad as meal prep and reserve the dressing until ready to eat so it doesn’t get soggy. This salad is definitely light but you can easily add chicken, salmon or even shrimp!
I just love using fresh ingredients. You can definitely use canned mandarin oranges if you can’t find fresh mandarins!
Also, if you are serving a group, this recipe is really easy to double or triple!
So, just chop the romaine, grate the carrot and peel the mandarin oranges, then put all the ingredients in a large bowl.
Next mix up the dressing, you can easily double or triple this recipe too. Just store in an airtight container until ready to use. It can be used on any salad!
This Spinach Mandarin Salad is such a great option if you are looking for a lighter meal. You can even buy all the ingredients already prepped at the grocery store. So, all you need to do is throw everything in a bowl and whip up the dressing! So easy!
