This Spinach White Bean Soup packs a lot of flavor with tomatoes, spinach, beans and chicken stock. It’s so easy to make and can be ready in 30 minutes, top with a little grated cheese and done! Plus, it freezes well, so it’s a great meal prep option!

- cannellini beans

- frozen chopped spinach
- baby pastina
- garlic powder
- crushed red pepper (optional)

How To Make Spinach White Bean Soup
This is the perfect year-round soup and it’s really easy to throw together. In a large stockpot, add chicken stock, diced tomatoes, cannellini beans (drained and rinsed), chopped spinach and bring to a low boil over medium heat.
Season with garlic powder, and salt and pepper to taste. I like to add some crushed red pepper flakes to kick it up a notch but that’s completely optional!
Let the soup simmer for 5 – 10 minutes and then add the pastina.
Once the pastina is cooked, about another 5 – 10 minutes the soup is ready to go! Serve immediately with a little grated parmesan cheese sprinkled on top!
Freeze leftovers in individual containers for easy meal prep!

Spinach White Bean Soup

- 28 oz diced tomatoes
- 15.5 oz cannellini beans, drained and rinsed
- 32 oz. chicken stock
- 10 oz frozen chopped spinach
- 1/3 cup baby pastina
- 1/2 tsp garlic powder
- 1/4 tsp crushed red pepper (optional)
- sea salt to taste
- black pepper to taste
Instructions
- In a large pot, add tomatoes, drained beans, chopped spinach and chicken stock and bring to a boil over medium heat.
- Add in garlic powder, salt, pepper and red pepper flakes if desired.
- Let cook for about 10 minutes before adding in the pastina.
- Continue cooking until pastina is ready, about another 5 – 10 minutes.
- Serve with grated parmesan cheese.
