- lean ground beef
- garlic powder
- sea salt
- black pepper
- bell peppers
- 90 second rice or quick cooking rice
- diced tomatoes
- basil
- oregano
- italian parsley
- shredded mozzarella

How To Make Stuffed Pepper Skillet
So, I love a one pot meal, easy cooking and easy clean up. This Stuffed Pepper Skillet is just that!
Let’s talk ingredients for a minute, I use Lean Ground Beef in pretty much everything I cook that calls for it. For one, it’s better for you and two you don’t have to worry about draining the beef at any point in your cooking.
I also suggest using fresh herbs whenever possible instead of dried. I typically measure out the dried in the recipes but fresh really do bring something better to the dish!
So, let’s get cooking. Use a large skillet, heat the olive oil over medium-high heat. Cook the garlic and onion for a couple of minutes and then add in the ground beef, breaking it apart with a spoon or spatula. Season with salt, pepper and garlic powder. Yes, I love garlic, so I using use fresh and the dried! 🙂
Add the bell peppers, after the ground beef has cooked for about 5 minutes. Let them cook for another 5 minutes, until they start to breakdown.
Now, add the can of diced tomatoes, the 90 second rice and the remaining spices. So, I chose the 90 second rice because it’s quick cooking. You can use other quick cooking rice but it may alter the cook times of the dish.
Let the tomatoes and rice cook for 10 minutes, then top with the mozzarella cheese. Continuing cooking until the cheese is melted.

- 1 tbsp olive oil
- 1 small yellow onion, chopped
- 3 garlic cloves, minced
- 1 lb lean ground beef
- 1/4 tsp garlic powder

- 1/8 tsp black pepper
- 3 bell peppers, sliced or diced
- 8 oz 90 second rice or quick cooking rice
- 28 oz diced tomatoes
- 1/4 tsp basil
- 1/4 tsp oregano
- 1/4 tsp italian parsley
- 8 oz shredded mozzarella
Instructions
- In a large skillet, heat oil over medium-high heat.
- Add in the garlic and onion, cook for 1 – 2 minutes and then add in the ground beef.
- Season with salt, pepper and garlic powder.
- Cook beef for 5 minutes chopping and separating the beef with a spoon.
- Add in the bell peppers and cook for another 5 minutes.
- Once the peppers start to cook, add in the can of diced tomatoes, the 90 second rice and the remaining spices.
- Stir to combine and cook for 10 minutes.
- Lastly, add the mozzarella cheese to the top and continuing cooking until cheese is melted.
- Serve immediately!
