These Waffle Pizzelles with Raisins are a fun twist on the Italian favorite! A treat around the holidays, these cookies are soft and chewy and made using your waffle iron!

- granulated sugar
- large eggs
- lemon rind (fresh or dried)
- baking powder
- anise extract
- lemon extract
- anise seed

How To Make Waffle Pizzelles with Raisins
Let’s get started! First, melt the butter in the small microwavable dish and set aside so it can cool for a few minutes. Then, beat the eggs with an electric hand mixer until foamy. Next, add in the melted butter and sugar and beat until well incorporated.
Now, mix in the lemon extract and anise extract. Then, blend in the sifted flour, baking powder, lemon rind and anise seed into the mixture. The mixture will be thick. Lastly, stir in the raisins.
Heat your waffle iron. Measure heaping tablespoonfuls onto your hot waffle iron using a tablespoon or cookie scoop. Cook for about 45 seconds or until a light golden brown.
Cool the cookies on a wire rack and continue with the remaining batter. Store in an airtight container. They keep very well in the freezer.

Ingredients
- 9 tbsp salted butter, melted and cooled
- 1 cup granulated sugar
- 6 large eggs
- 1 tbsp lemon rind (fresh or dried)
- 2 tsp baking powder
- 1 oz anise extract
- 1 oz lemon extract
- 1 tsp anise seed
- 2 1/2 cups all-purpose flour, sifted
- 1 cup raisins
Instructions
- In large bowl, beat eggs with an electric hand mixer until foamy.
- Beat in cooled melted butter and sugar.
- Beat in the anise extract and lemon extract.
- Then beat in the anise seed, lemon rind, baking powder and sifted flour.
- Stir in raisins.
- Heat your waffle iron.
- Measure heaping tablespoonfuls of batter using a cookie scoop or spoon onto the waffle iron and cook for about 45 seconds, depending on desired crispiness.
- Remove and place on wire rack and continue process with remaining batter.
- Cool and store in refrigerator or freezer in an airtight container.
