These Whole Wheat Waffles are perfect for a weekend breakfast and brunch. They make great breakfast meal prep too! Just refrigerate or freeze and reheat when ready to eat! Did I mention they are also vegan?
This recipe can be made on a mini waffle iron or standard size waffle iron. I will explain the measurements and cook times for both.
So, back to my love for these Whole Wheat Waffles! They are light and fluffy, not to mention healthy and tasty!
Let’s get started, by heating your waffle iron. Mine makes 4, 4.5 x 4.5 waffles and this recipe will make 6 or 7 standard size waffles. Or if you are using a mini waffle maker, it will make 16 waffles.
In a large bowl, add the wet ingredients, unsweetened almond milk, maple syrup and unsweetened applesauce and mix.
Now add the remaining ingredients, whole wheat flour, baking powder and cinnamon. Mix until combined.
Lightly grease the waffle iron with cooking spray. I have had mine stick before so I suggest using the spray between batches of waffles.
Using a 1/2 cup measuring cup, scoop batter into the waffle molds. I try to come close to covering the area with batter so I get close to a perfect square waffle 🙂 If your waffle iron is a different size and shape, you may need to adjust the amount of batter used.
If you are using a mini waffle maker, use the 1/4 cup scoop.
Cook for 1 – 2 minutes and then carefully remove from waffle iron using a fork. If using a mini iron, cook for only one minute.
Serve with maple syrup and strawberries!

Pre-heat Waffle Iron.

Add flour, cinnamon, baking powder and mix until combined.

Lightly coat waffle iron with cooking spray.

Measure about 1/2 cup of batter per waffle. (Amount may differ based on waffle iron but measure out enough batter to almost cover the waffle mold). If using a mini iron, measure a 1/4 cup.

Cook for 1 – 2 minutes until desired doneness. (One minute for a mini iron.)

Lightly coat waffle iron again with cooking spray. (Do this between each set of waffles).

Repeat steps until batter is used.

Serve with maple syrup and fruit is desired.
